Also, what Americans commonly call coleslaw is an abomination. It's a disgrace. It's chopped cabbage drowned in crap mayo. This should anger anyone who loves food (you casserole enthusiasts are probably good with it). This recipe will steer you down a better path—to coleslaw happiness. Real coleslaw.
Ingredients
• 1/2 head green cabbage
• 1/2 head red cabbage
• 1/2 bunch mustard greens
• 1/2 bunch collard greens
• 1/2 lg. sweet onion
Mayo recipe
• 2 eggs
• 3 tbsp. lemon juice
• 2 cups olive oil
• 2 tsp. salt
• 0.5 tsp. pepper
• 4 tbsp. sugar
• 0.5 cup whole-grain mustard
Process
1. Preferably by hand, chop greens, finely shred cabbage, and finely dice onion. Set aside.
2 For mayo: In a food processor or blender (or by hand, if need be), blend eggs and lemon juice for 10 seconds.
3 Slowly add olive oil in intervals (add, blend, add, blend). Mixture should thicken.
4. Add salt, pepper, and sugar, and pulse once or twice to blend. Adjust to taste.
5. Add mayo to chopped slaw ingredients. Mix well. Enjoy.
